- Preheat your oven to 400°F (200°C). Wash and scrub the sweet potatoes, then place them on a foil-lined baking sheet.
- Bake the sweet potatoes for 45-60 minutes until fork tender.
- Remove and let them cool for about 10 minutes. Peel the skin and mash the flesh in a mixing bowl.
- Add almond milk, nuts, maple syrup, and almond butter to the mashed sweet potatoes. Blend until fluffy.
- Adjust consistency with more almond milk if needed, and let the mixture rest for 5 minutes.
- Spoon the mixture into bowls and top with fresh fruits, Greek yogurt, and flaxseed as desired.
