Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wash and scrub the sweet potatoes, then place them on a foil-lined baking sheet.
  2. Bake the sweet potatoes for 45-60 minutes until fork tender.
  3. Remove and let them cool for about 10 minutes. Peel the skin and mash the flesh in a mixing bowl.
  4. Add almond milk, nuts, maple syrup, and almond butter to the mashed sweet potatoes. Blend until fluffy.
  5. Adjust consistency with more almond milk if needed, and let the mixture rest for 5 minutes.
  6. Spoon the mixture into bowls and top with fresh fruits, Greek yogurt, and flaxseed as desired.
