  • 2 cups shredded chicken homemade or store-bought
  • 0.5 cups sun-dried tomatoes preferably in oil
  • 1 cup celery diced
  • 0.5 cups red onion finely diced
For the Dressing
  • 0.5 cups plain Greek yogurt
  • 0.25 cups mayonnaise
  • 0.25 cups fresh basil roughly chopped
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • to taste salt

Preparation
  1. Start by cooking and shredding chicken if using raw, or use pre-packaged shredded chicken.
  2. While the chicken cools, drain and chop the sun-dried tomatoes, and dice the celery and red onion.
  3. Combine the chicken, celery, red onion, and sun-dried tomatoes in a large mixing bowl.
  4. In a separate bowl, whisk together Greek yogurt and mayonnaise. Add basil, garlic, lemon juice, salt, and pepper. Mix until smooth.
  5. Pour the dressing over the chicken and vegetable mixture. Gently toss to coat everything evenly.
  6. Serve immediately in wraps or on greens, or store in the fridge for up to 3 days.
