Preparation
- Start by cooking and shredding chicken if using raw, or use pre-packaged shredded chicken.
- While the chicken cools, drain and chop the sun-dried tomatoes, and dice the celery and red onion.
- Combine the chicken, celery, red onion, and sun-dried tomatoes in a large mixing bowl.
- In a separate bowl, whisk together Greek yogurt and mayonnaise. Add basil, garlic, lemon juice, salt, and pepper. Mix until smooth.
- Pour the dressing over the chicken and vegetable mixture. Gently toss to coat everything evenly.
- Serve immediately in wraps or on greens, or store in the fridge for up to 3 days.
