Preparation Steps
  1. In a blender, combine strawberries, milk, yogurt, maple syrup, freeze-dried strawberries, shredded coconut, vanilla extract, and a pinch of salt. Blend on medium speed until smooth.
  2. Whisk in chia seeds gradually in a large bowl. Cover and let rest for 5 minutes, then stir and refrigerate for at least 1 hour until thick.
  3. Prepare the crunchy topping by pulsing blanched almonds, oats, shredded coconut, chopped dates, and a pinch of salt until a coarse crumble forms in a mini food processor.
  4. Assemble by layering pudding and crumble in serving cups, finishing with a sprinkle of crumble and fresh strawberries.
