  • 1 lb Large Shrimp Peeled and deveined
  • 9 oz Refrigerated Three Cheese Tortellini Recommended brands like Buitoni
For the Sauce
  • 2 tbsp Olive or Grapeseed Oil Or any neutral cooking oil
  • 1/2 cup Dry White Wine Can be replaced with additional stock
  • 4 tbsp Unsalted Butter
  • 4 cloves Minced Garlic
  • 2 tbsp All-Purpose Flour
  • 1 cup Seafood or Chicken Stock Choose chicken if seafood stock is unavailable
  • 4 oz Cream Cheese
  • 1/2 cup Heavy Cream
  • 1 tbsp Dried Basil
  • 1/2 tsp Crushed Red Pepper
For the Vegetables
  • 2 cups Fresh Baby Spinach Frozen can be used if well-drained
For the Finish
  • 1/2 cup Freshly Grated Parmesan

Method
 

Step-by-Step Instructions
  1. Season the shrimp with all-purpose seasoning and let rest.
  2. Heat oil in skillet, sear shrimp for 1-2 minutes per side until pink.
  3. Deglaze skillet with wine, then add butter and garlic, sauté until fragrant.
  4. Sprinkle flour over the garlic mixture, stir until smooth, add stock and whisk.
  5. Incorporate cream and basil, simmer for 5-7 minutes until thickened.
  6. Cook tortellini in salted water according to package directions.
  7. Add spinach to sauce, let wilt and add red pepper.
  8. Combine tortellini and shrimp into the sauce, garnish with parmesan, serve warm.
