Marinade
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 slices lemon for grilling

Method
 

Preparation
  1. In a medium bowl, whisk together lemon juice, olive oil, minced garlic, chopped thyme, and chopped rosemary. Season with salt and black pepper to taste.
  2. Place chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over the chicken, seal tight, and marinate in refrigerator for 30 minutes to 2 hours.
  3. Preheat your grill to medium-high heat, around 375°F to 400°F.
  4. Remove chicken from marinade and grill for 6-7 minutes on one side, then flip and grill for another 5-6 minutes until internal temperature reaches 165°F.
  5. Grill lemon slices alongside chicken for the last 3 minutes of cooking.
  6. Let the chicken rest for 5 minutes before slicing or serving whole with grilled lemon slices.
