- In a medium bowl, whisk together lemon juice, olive oil, minced garlic, chopped thyme, and chopped rosemary. Season with salt and black pepper to taste.
- Place chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over the chicken, seal tight, and marinate in refrigerator for 30 minutes to 2 hours.
- Preheat your grill to medium-high heat, around 375°F to 400°F.
- Remove chicken from marinade and grill for 6-7 minutes on one side, then flip and grill for another 5-6 minutes until internal temperature reaches 165°F.
- Grill lemon slices alongside chicken for the last 3 minutes of cooking.
- Let the chicken rest for 5 minutes before slicing or serving whole with grilled lemon slices.
