Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, and fresh parsley. Sprinkle in ground cumin, ground coriander, salt, and black pepper. Blend the ingredients well until they form a cohesive mixture, about 2-3 minutes.
  2. Take portions of the chicken mixture and shape them into compact, oval-shaped koftas, approximately 2-3 inches long. Place them on a tray lined with parchment paper.
  3. Preheat your grill to medium-high heat (around 375°F to 400°F) and lightly brush the grates with olive oil. Allow the grill to heat for about 5 minutes.
  4. Place the shaped koftas on the grill and cook for 10-12 minutes, turning occasionally until golden-brown. Use a meat thermometer to check for doneness, aiming for an internal temperature of 165°F.
  5. While the koftas are grilling, mix plain yogurt, lemon juice, and a pinch of salt in a separate bowl. Stir until all ingredients are well combined and smooth.
