  • 1 cup Red Lentils Rinsed and cooked
  • 1 medium Sweet Potato Grated
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 pinch Salt & Pepper To taste
  • ¼ cup Cilantro Chopped
  • ½ cup Flour All-purpose or gluten-free
  • 1 tablespoon Olive Oil For frying
For the Creamy Sauce
  • 1 medium Avocado Ripe
  • ¼ cup Cilantro Chopped
  • 1 clove Garlic Minced
  • 1 lime Lime Juice Fresh
  • ½ cup Yogurt Dairy or dairy-free
  • Water Splash, adjust for consistency

Method
 

Cooking Instructions
  1. Rinse the red lentils under cold water. In a saucepan, combine lentils with 2 cups of water, bring to a boil, then simmer for 10-12 minutes until tender.
  2. Combine cooled lentils, grated sweet potato, chopped onion, minced garlic, cumin, paprika, salt, pepper, cilantro, and flour in a mixing bowl. Let rest for 5-10 minutes.
  3. Shape the mixture into small patties. Heat olive oil in a skillet over medium heat and cook the patties for 3-4 minutes per side until golden brown.
  4. In a blender, combine avocado, chopped cilantro, garlic, lime juice, yogurt, and a splash of water. Blend until smooth.
  5. Serve the patties warm drizzled with avocado sauce and garnish with cilantro or lime wedges if desired.
