- Rinse the red lentils under cold water. In a saucepan, combine lentils with 2 cups of water, bring to a boil, then simmer for 10-12 minutes until tender.
- Combine cooled lentils, grated sweet potato, chopped onion, minced garlic, cumin, paprika, salt, pepper, cilantro, and flour in a mixing bowl. Let rest for 5-10 minutes.
- Shape the mixture into small patties. Heat olive oil in a skillet over medium heat and cook the patties for 3-4 minutes per side until golden brown.
- In a blender, combine avocado, chopped cilantro, garlic, lime juice, yogurt, and a splash of water. Blend until smooth.
- Serve the patties warm drizzled with avocado sauce and garnish with cilantro or lime wedges if desired.
