- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil salted water in a large pot and add fresh carrot rounds. Cook for 10-12 minutes until fork-tender.
- Gently smash each carrot round with the bottom of a glass or measuring cup.
- Drizzle olive oil over smashed carrots, sprinkle with garlic powder, smoked paprika, salt, black pepper, and top with Parmesan cheese.
- Arrange seasoned carrots on the baking sheet and roast for 20-25 minutes, flipping halfway through.
- Remove from oven and sprinkle with chopped fresh parsley before serving.
