For the Salmon Bites
  • 1 lb Salmon Filet skinless, cut into 1-inch pieces
  • 1/4 cup All-Purpose Flour or gluten-free flour
  • 1 tsp Kosher Salt divided
  • 1 Egg beaten
  • 2 tsp Dijon Mustard or yellow mustard
For the Coating
  • 1 cup Panko Breadcrumbs Progresso brand recommended
  • 1/2 tsp Garlic Powder or fresh garlic, minced
  • 1/2 tsp Onion Powder optional
  • 1/2 tsp Dried Dill or dried thyme
  • 1/2 tsp Dried Parsley or fresh parsley
For Baking
  • 1 tbsp Olive Oil or cooking spray

Method
 

Preparation Steps
  1. Cut the salmon filet into 1-inch pieces and pat dry with paper towels.
  2. Set up a breading station with bowls of flour, egg and mustard, and panko breadcrumbs seasoned with spices.
  3. Dredge each salmon piece in flour, dip in egg mixture, then press into panko breadcrumbs.
  4. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper and oil.
  5. Arrange the coated salmon bites on the baking sheet and bake for 10 minutes.
  6. Flip each bite, switch the oven to broil, and broil for 2-3 minutes until golden.

Notes
