- Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine the halved Brussels sprouts and uniformly cut carrot batons. Toss them together.
- Drizzle half of the melted coconut oil over the vegetables, then add the spices and mix well.
- Spread the seasoned vegetables evenly on the prepared baking sheet and roast for 25 minutes.
- Remove from the oven and drizzle the remaining melted coconut oil and maple syrup. Toss to coat evenly.
- Serve immediately in a dish while hot and crispy.
