  • 2 tablespoons Maple Syrup Drizzle at the end for a fresher flavor.
For the Vegetables
  • 1 pound Brussels Sprouts Choose bright green and firm ones.
  • 1 pound Carrots Cut into uniform batons.
For the Spice Mix
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Cooking Instructions
  1. Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the halved Brussels sprouts and uniformly cut carrot batons. Toss them together.
  3. Drizzle half of the melted coconut oil over the vegetables, then add the spices and mix well.
  4. Spread the seasoned vegetables evenly on the prepared baking sheet and roast for 25 minutes.
  5. Remove from the oven and drizzle the remaining melted coconut oil and maple syrup. Toss to coat evenly.
  6. Serve immediately in a dish while hot and crispy.
