Ingredients
  

For the Dough
  • 8 oz Cream Cheese softened
  • 1 cup Almond Flour or coconut flour
  • 2 tbsp Coconut Flour
  • 2 tbsp Erythritol can substitute with other sweeteners
  • 1 pcs Egg
  • 1 tsp Vanilla Extract use pure for best flavor
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
For the Filling
  • 2 tsp Ground Cinnamon
  • Additional Sweetener (optional) for dusting

Method
 

Dough Preparation
  1. In a large mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt until thoroughly combined.
  2. In a separate bowl, beat the softened cream cheese, egg, and vanilla extract using a hand mixer until smooth and creamy.
  3. Gently fold the dry ingredients into the cream cheese mixture using a spatula to form a cohesive dough.
  4. Place the dough between two sheets of parchment paper and roll it out to about ¼-inch thickness.
Filling and Cooking
  1. In a small bowl, mix together ground cinnamon and optional sweetener. Spread this mixture evenly over the rolled-out dough.
  2. Starting from one end, carefully roll the dough tightly into a log shape and slice into 1-inch pieces.
  3. Heat a non-stick skillet over medium heat and cook the roll-ups cut-side down for 3-4 minutes until golden brown.
  4. Flip and cook the other side for an additional 3-4 minutes until uniformly brown.
  5. Let the roll-ups cool slightly on a wire rack before serving.
