Dough Preparation
- In a large mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt until thoroughly combined.
- In a separate bowl, beat the softened cream cheese, egg, and vanilla extract using a hand mixer until smooth and creamy.
- Gently fold the dry ingredients into the cream cheese mixture using a spatula to form a cohesive dough.
- Place the dough between two sheets of parchment paper and roll it out to about ¼-inch thickness.
Filling and Cooking
- In a small bowl, mix together ground cinnamon and optional sweetener. Spread this mixture evenly over the rolled-out dough.
- Starting from one end, carefully roll the dough tightly into a log shape and slice into 1-inch pieces.
- Heat a non-stick skillet over medium heat and cook the roll-ups cut-side down for 3-4 minutes until golden brown.
- Flip and cook the other side for an additional 3-4 minutes until uniformly brown.
- Let the roll-ups cool slightly on a wire rack before serving.
