  • 3 cups sweet potato mashed
  • 1 medium jalapeno minced
  • 1/4 cup cilantro chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper adjust to taste
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cinnamon
  • 1 large egg or flax egg for vegan
  • 1 cup panko
  • 1/4 cup all-purpose flour
  • 2 tablespoons oil for frying

Method
 

Step-by-Step Instructions
  1. Peel and cut sweet potatoes into chunks. Boil in salted water for about 15 minutes until fork-tender. Drain and mash until smooth. Allow to cool slightly.
  2. In the bowl with cooled sweet potato, add jalapeno, cilantro, smoked paprika, cumin, coriander, salt, pepper, curry powder, cinnamon, and egg. Mix thoroughly.
  3. Take 1/4 cup of the mixture and shape into round patties, flattening slightly. Place on a plate.
  4. Heat oil in a non-stick frying pan over medium heat. Fry patties for 3-4 minutes on each side until golden brown. Add more oil as needed.
  5. Remove patties and drain on paper towels. Serve warm with dips like cilantro lime aioli or curry ketchup.
