  1. Cut chicken breast into bite-sized cubes, season with soy sauce and white pepper, and add egg. Mix until evenly coated.
  2. Pour cornstarch into the bowl with the seasoned chicken and toss until fully coated.
  3. Heat neutral oil in a pan to 350°F (180°C). Test readiness by checking if a small piece of bread bubbles.
  4. Fry coated chicken pieces for 1-2 minutes until lightly golden. Remove and drain on paper towel.
  5. After cooling, return chicken to hot oil for a second fry, cooking for 2-3 minutes until deeply golden.
