  • 2 slices thick-cut sourdough or brioche bread Choice of bread may vary.
  • 2 ounces sharp cheddar cheese Sliced or shredded.
  • 2 ounces creamy brie cheese Sliced.
  • 1/2 cup fresh blueberries Can be lightly macerated.
  • 1 tablespoon unsalted butter For cooking.
Optional Additions
  • 1 tablespoon honey For drizzling before serving.
  • 1 tablespoon fresh mint Chopped, for garnishing.

Instructions
  1. Gather all your ingredients. Slice the bread into thick pieces and prepare the cheese and blueberries.
  2. Layer one slice of bread with sharp cheddar and brie, then top with blueberries.
  3. Melt unsalted butter in a non-stick skillet over medium heat. Place the sandwich in the skillet.
  4. Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
  5. Remove from the pan, optionally drizzle with honey and sprinkle with mint before cutting in half.
