- In a medium saucepan, combine fresh blueberries, white sugar, lemon juice, and lemon thyme. Bring to a boil, then simmer for about 20 minutes until thickened.
- Take two slices of bread, spread blueberry compote on one side of each, sprinkle cheddar and mozzarella on one slice, then cover with the other slice.
- Heat a skillet, melt butter, grill sandwiches covered for 2-3 minutes until golden brown. Flip and repeat until the cheese is gooey.
- Remove from skillet, slice sandwiches in half, and serve immediately.
