For the Pasta
  • 8 oz Pasta any shape like penne or spaghetti
  • ¼ tsp Fine Salt plus more to taste
For the Sauce
  • 1 Tbsp Olive Oil essential for sautéing
  • 2-3 cloves Garlic minced
  • 9 oz Baby Spinach washed
  • 5 oz Cream Cheese gives that dreamy creaminess
  • 1 oz Freshly Grated Parmesan Cheese plus extra for serving
  • ¼ tsp Ground Nutmeg or to taste
  • Black Pepper to taste

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water, then drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add washed baby spinach to the skillet, season with fine salt, and cook for 3-4 minutes until wilted.
  4. Reduce heat to low, stir in cream cheese and reserved pasta water until melted and creamy. Add Parmesan and nutmeg.
  5. Add the drained pasta to the skillet, tossing to coat with the sauce. Heat through for a minute or two.
  6. Serve immediately, drizzled with olive oil and more grated Parmesan.
