Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with a bit of olive oil or cooking spray.
  2. Cut chicken breasts in half horizontally and pound them gently for even thickness. Marinate with olive oil, minced garlic, Italian seasoning, salt, and black pepper for 15 to 30 minutes.
  3. In a skillet, heat olive oil over medium heat and sauté fresh spinach for 2 to 3 minutes until wilted.
  4. In a mixing bowl, beat softened cream cheese until smooth. Stir in wilted spinach and half of the shredded mozzarella cheese.
  5. Arrange marinated chicken in the baking dish, spoon cream cheese mixture on top, and sprinkle remaining mozzarella. Bake for 20 to 30 minutes until cooked through.
