Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until it shimmers.
  2. Add 1 chopped onion and 2 minced garlic cloves to the pot. Sauté for about 3-4 minutes until translucent.
  3. Stir in 4-5 chopped carrots and an inch of grated fresh ginger. Cook for an additional 5 minutes.
  4. Pour in 4 cups of vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Blend the soup until smooth and creamy using an immersion blender.
  6. Dissolve 3 tablespoons of miso paste with a ladleful of hot soup, then stir back into the pot.
  7. Taste and adjust seasoning with salt and black pepper as desired.
  8. Serve hot, topped with optional garnishes.
