  • 1 cup Whole Milk or unsweetened almond milk
  • 1 cup Chicken Broth or vegetable broth for vegetarian
  • 4 ounces Cream Cheese or Neufchâtel for a lighter version

Method
 

Cooking Instructions
  1. Cut chicken breasts into bite-sized pieces and coat with Cajun seasoning and smoked paprika. Marinate for 10 minutes.
  2. Boil salted water in a large pot, add spaghetti, and cook until al dente (8-10 minutes). Drain and set aside.
  3. Heat a skillet over medium-high heat, add oil or butter, sear chicken for 6-8 minutes until browned and cooked through. Set aside.
  4. In the same skillet, melt butter, add minced garlic and sauté for 30 seconds. Whisk in flour for roux, stirring for another minute.
  5. Gradually add milk and chicken broth while whisking. Cook for 3-5 minutes until sauce thickens, then stir in cream cheese.
  6. Return the seared chicken and cooked spaghetti to the skillet. Toss together and simmer for 2-3 minutes.
  7. Transfer to an oven-safe dish, top with mozzarella cheese, and broil for 2-3 minutes until bubbly and golden.
