- Cut chicken breasts into bite-sized pieces and coat with Cajun seasoning and smoked paprika. Marinate for 10 minutes.
- Boil salted water in a large pot, add spaghetti, and cook until al dente (8-10 minutes). Drain and set aside.
- Heat a skillet over medium-high heat, add oil or butter, sear chicken for 6-8 minutes until browned and cooked through. Set aside.
- In the same skillet, melt butter, add minced garlic and sauté for 30 seconds. Whisk in flour for roux, stirring for another minute.
- Gradually add milk and chicken broth while whisking. Cook for 3-5 minutes until sauce thickens, then stir in cream cheese.
- Return the seared chicken and cooked spaghetti to the skillet. Toss together and simmer for 2-3 minutes.
- Transfer to an oven-safe dish, top with mozzarella cheese, and broil for 2-3 minutes until bubbly and golden.
