Cooking Steps
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add minced garlic, ground cumin, paprika, and cayenne pepper (if using) to the pan; cook for 1 minute.
  4. Add cubed chicken breast and cook for 5–7 minutes until browned on all sides.
  5. Season the chicken with salt and pepper to taste.
  6. Pour in the coconut milk and bring to a gentle simmer.
  7. Mix in diced tomatoes and lime juice, stirring thoroughly.
  8. Reduce heat to low, partially cover, and let simmer for 15-20 minutes.
  9. Stir in chopped cilantro before serving.
  10. Serve hot over steamed rice, garnished with extra cilantro.
