- Slice the ripe avocados in half and remove the pit. Scoop the flesh into a mixing bowl.
- Mash the avocados with a fork or immersion blender until creamy but slightly chunky.
- Add lemon juice, salt, and black pepper to the mashed avocados, stirring until well incorporated.
- Transfer the mixture into serving cups and chill in the refrigerator for at least 15 minutes.
- Before serving, layer smoked salmon on top of each mousse cup.
