- Sauté aromatics: Heat olive oil or unsalted butter in a skillet over medium heat. Add onion and celery, sauté for 5-7 minutes until softened.
- Combine ingredients: In a mixing bowl, combine chopped turkey, breadcrumbs, and the cooled sautéed onion and celery mixture. Add cranberries, parsley, thyme, salt, and pepper, mixing gently.
- Add binding agents: Beat the egg and pour it into the turkey mixture, gradually stirring in chicken broth until the mixture holds together.
- Chill mixture: Cover the bowl with plastic wrap and refrigerate for 20-30 minutes to firm up the mixture.
- Shape and prepare: Preheat your oven to 375°F (190°C). Portion the mixture into balls about 2 inches and place on a lined baking sheet.
- Cook: Bake for 25 minutes or until golden brown and crispy. Alternatively, air fry at 360°F (182°C).
