Method
 

Preparation
  1. In a food processor, combine fresh cranberries, brown sugar, olive oil, honey, balsamic vinegar, minced garlic, orange zest, orange juice, sea salt, and black pepper. Blend until smooth.
  2. Place the skin-on chicken thighs into a zipper bag or shallow dish, and pour in the prepared marinade. Seal the bag or cover the dish, then refrigerate for at least 2 hours.
  3. Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch roasting pan. Place the marinated chicken thighs in the pan, pouring any remaining marinade over them.
  4. Bake the chicken for 25-30 minutes, checking for doneness. The chicken should reach an internal temperature of 165°F (74°C).
  5. After baking, brush the chicken with a mixture of honey and olive oil, then broil for 2-3 minutes.
  6. Remove from the oven and let the chicken rest for about 10 minutes. Garnish with additional orange zest and cranberries before serving.
