Step-by-Step Instructions
- Bring a large pot of salted water to a rolling boil. Add the cheese tortellini, cooking for 3-5 minutes until al dente. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season your steak with salt, black pepper, garlic powder, and smoked paprika. Sear steak for 3-5 minutes on each side until browned. Remove and let it rest.
- In the same skillet, reduce heat to medium and add 2 tablespoons of butter. Once melted, add minced garlic and sauté for 1 minute until fragrant.
- Pour in 1 cup of heavy cream and 3/4 cup of whole milk, stirring continuously. Simmer for 3-4 minutes until it thickens slightly.
- Whisk in 1 1/4 cups of Parmesan cheese until melted. Season sauce with salt and pepper to taste.
- Return sliced steak and tortellini to skillet, tossing for about 2 minutes until well combined and heated through.
- Garnish with freshly chopped parsley, red pepper flakes, and cracked black pepper. Serve immediately.

Notes
For the best results, allow the seared steak to rest before slicing. This helps retain its juices.
