  • 1 cup Shredded Cheese Cheddar, mozzarella, or feta

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and set a rack in the center.
  2. In a non-stick skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sauté for 3-4 minutes until translucent. Stir in chopped spinach and cook for an additional 2-3 minutes until wilted. Season with garlic powder, salt, and pepper, remove from heat.
  3. In a large bowl, whisk together eggs, milk, cottage cheese, Italian seasoning, and a pinch of salt and pepper.
  4. Fold the cooled sautéed vegetables into the egg mixture, then gently mix in the shredded cheese.
  5. Lightly grease a 9-inch pie dish and pour the mixture into the dish, smoothing the top.
  6. Bake in the preheated oven for 40-45 minutes until golden brown and a toothpick inserted comes out clean.
  7. Remove from oven and let cool for 5-10 minutes before slicing and serving warm or at room temperature.
