Preparation
- Combine rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and salt in a medium bowl. Stir well until combined.
- Fold in the sliced bananas gently into the oat mixture.
- Divide the oat mixture into two jars or airtight containers and seal tightly.
- Place jars in the refrigerator and chill for at least 4 hours, preferably overnight.
- When ready to serve, take out of the fridge, stir well. If the mixture is too thick, add a splash of coconut milk.
- Top with fresh whipped cream and additional shredded coconut if desired.
