- In a medium bowl, combine rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir until well combined.
- If using bananas, fold in the sliced bananas gently until evenly distributed.
- Divide the mixture evenly into two jars or containers, packing tightly but not overflowing.
- Seal the jars and chill in the refrigerator overnight or for at least 4 hours.
- Before serving, stir the oats and top with whipped cream and additional shredded coconut.
