  • 1 cup Coconut Milk or swap with almond/oat milk
  • 1/2 cup Greek Yogurt plain or vanilla
  • 1/4 cup Shredded Unsweetened Coconut omit if desired
For Sweetness and Flavor
  • 2 tablespoons Maple Syrup or Honey to taste
  • 1 teaspoon Vanilla Extract preferably pure
  • 1/2 teaspoon Ground Cinnamon optional
  • 1 pinch Salt
Optional Mix-Ins and Toppings
  • 1 medium Sliced Bananas optional
  • 1/4 cup Fresh Whipped Cream or whipped coconut cream
  • to taste Additional Shredded Coconut for garnish

Method
 

Preparation Steps
  1. In a medium bowl, combine rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir until well combined.
  2. If using bananas, fold in the sliced bananas gently until evenly distributed.
  3. Divide the mixture evenly into two jars or containers, packing tightly but not overflowing.
  4. Seal the jars and chill in the refrigerator overnight or for at least 4 hours.
  5. Before serving, stir the oats and top with whipped cream and additional shredded coconut.
