Step-by-Step Instructions
  1. In a mixing bowl, combine oat flour, maple syrup, egg, and egg whites. Whisk until smooth, about 2-3 minutes. Set aside to rest.
  2. Preheat a non-stick skillet over medium heat with a small amount of oil or butter. Heat for 2-3 minutes until water sizzles on contact.
  3. Pour 1/3 cup of batter into the skillet and swirl to form a thin circle. Cook for 1-2 minutes until edges lift, then flip and cook for 1-2 more minutes.
  4. Mix Greek yogurt, granular sweetener, and cinnamon in a bowl until creamy. This is the filling for your crepes.
  5. Spread yogurt filling over each crepe and roll them up from one end to the other. Create a stack.
  6. For the topping, mix sweetener and cinnamon. Dust over the rolled crepes before serving warm.
