Step-by-Step Instructions
  1. In a large bowl, combine 1 cup of oat flour, 2 tablespoons of maple syrup, 1 egg, and 2 egg whites. Whisk together until the mixture is smooth and free of lumps. Let it rest for about 5 minutes.
  2. Heat a non-stick skillet over medium heat and add oil or butter to coat. Pour about 1/3 cup of the batter onto the pan and cook for 1-2 minutes, then flip and cook until golden.
  3. In a separate bowl, blend 1 cup of Greek yogurt with 2 tablespoons of granular sweetener and 1 teaspoon of ground cinnamon. Stir until creamy.
