Ingredients
  

For the Rice
  • 1 cup Long-Grain White Rice Rinsed until water runs clear
  • 2 cups Chicken Broth Or vegetable broth for vegetarian
  • 1 teaspoon Cumin Adjust for spiciness
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder Or fresh garlic
  • 1 pinch Cayenne Pepper Vary according to heat preference
  • 1 tablespoon Butter Or olive oil for dairy-free
  • 1 tablespoon Cilantro Fresh, or omit
  • 1 tablespoon Lime Juice Fresh juice preferred
For the Tortilla Bowls
  • 4 pieces Flour Tortillas Or corn tortillas for gluten-free
  • ½ cup Vegetable Oil For frying
For the Beef Mixture
  • 1 pound Ground Beef Or turkey/chicken
  • 1 small Onion Diced
  • 2 cloves Garlic Minced
  • 2 teaspoons Chili Powder Adjust to taste
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Oregano
For Additional Toppings
  • 1 cup Salsa Mild or hot
  • 1 can Green Chilis
  • 1 can Black Beans Rinsed
  • 1 cup Sweet Corn Frozen or canned
  • 1 cup Lettuce Shredded
  • 1 cup Guacamole
  • 1 cup Pico de Gallo
  • ½ cup Sour Cream Omit for vegan
  • 2 tablespoons Additional Cilantro Chopped
  • 2 pieces Lime Wedges
  • 1 cup Tortilla Chips For scooping

Method
 

Cooking Instructions
  1. Rinse rice under cold water until clear. In a saucepan, combine rice, broth, cumin, onion powder, garlic powder, and cayenne. Boil, reduce heat, cover, and simmer for 15 minutes. Fluff with butter and lime juice.
  2. Heat oil in a skillet. Fry tortillas for 30 seconds each side until golden. Press into bowl molds and bake at 375°F for 10 minutes until crispy.
  3. In a skillet, heat oil and cook ground beef until browned. Add onion and garlic, cooking until translucent. Stir in chili powder, paprika, and oregano. Add salsa and green chilis, simmer for 5 minutes.
  4. Sauté sweet corn in a skillet over medium-high heat for 5-7 minutes until charred.
  5. Heat black beans in a saucepan over medium-low for 5 minutes.
  6. Assemble the bowls starting with rice, then beef, corn, and beans.
  7. Let everyone customize their bowls with desired toppings.
