  • 1/4 cup Fresh Cilantro Can be replaced with basil or parsley

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium-high heat. Add onion and sauté for 3–4 minutes until translucent. Stir in garlic, cumin, paprika, and cayenne and cook for another minute until fragrant.
  2. Add chicken pieces to the skillet. Sear the chicken undisturbed for 1 minute, then stir occasionally for 5–7 minutes until golden-brown. Season with salt and pepper.
  3. Pour in coconut milk, scraping brown bits from the skillet. Bring to a gentle simmer and let flavors blend for 2–3 minutes.
  4. Stir in diced tomatoes and lime juice. Cover and simmer on low heat for 15–20 minutes until chicken is cooked through.
  5. Stir in chopped cilantro and adjust seasoning if necessary. Serve warm over rice.
