Ingredients
  

For the Oats
  • 1 cup Old-Fashioned Rolled Oats
  • 1 cup Almond/Coconut/Cashew Milk
  • 1/2 cup Coconut Yogurt
For the Compote
  • 1 cup Fresh Blueberries
  • 2 tablespoons Chia Seeds
  • 2 tablespoons Maple Syrup/Raw Honey/Rice Malt Syrup Adjust to taste
  • 1/2 tablespoon Lemon Juice & Zest Lime juice can substitute
  • 1 teaspoon Vanilla Extract Optional
For Topping
  • 1/4 cup Granola Optional, choose gluten-free

Method
 

Preparation
  1. In a medium bowl, combine oats, milk, and yogurt. Mix thoroughly and cover with a lid or plastic wrap.
  2. Stir in chia seeds and sweetener. Mix well and refrigerate for at least 4 hours or overnight.
  3. In a small saucepan, combine blueberries, chia seeds, maple syrup, lemon juice, and vanilla. Cook over medium heat for 5-7 minutes until softened.
  4. Once compote has thickened, remove from heat and cool to room temperature.
  5. Divide oats into bowls and top with blueberry compote, granola, and lemon zest if desired.
  6. Enjoy immediately or store leftovers in an airtight container.
