- In a medium bowl, combine oats, milk, and yogurt. Mix thoroughly and cover with a lid or plastic wrap.
- Stir in chia seeds and sweetener. Mix well and refrigerate for at least 4 hours or overnight.
- In a small saucepan, combine blueberries, chia seeds, maple syrup, lemon juice, and vanilla. Cook over medium heat for 5-7 minutes until softened.
- Once compote has thickened, remove from heat and cool to room temperature.
- Divide oats into bowls and top with blueberry compote, granola, and lemon zest if desired.
- Enjoy immediately or store leftovers in an airtight container.
