Ingredients
  

For the Crust
  • 1 package Graham Crackers crushed
  • 2 tablespoons Sugar
  • 1 teaspoon Cinnamon
  • 4 tablespoons Butter melted
For the Cheesecake Filling
  • 16 ounces Cream Cheese softened
  • 1 teaspoon Vanilla Extract pure
  • 3/4 cup Sugar adjust to taste
  • 1/4 cup Flour gluten-free optional
  • 1 large Egg do not overbeat
For the Blueberry Mixture
  • 2 cups Fresh Blueberries or thawed frozen
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon Juice
For the Crumble Topping
  • 1/2 cup Brown Sugar or regular sugar
  • 1 cup Quick-Cooking Oats or rolled oats
  • 4 tablespoons Butter melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed graham crackers, sugar, cinnamon, and melted butter until evenly blended.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie plate. Prebake for about 8 minutes until lightly golden and cool completely.
Cheesecake Filling
  1. Beat softened cream cheese with vanilla, sugar, flour, and egg in a large mixing bowl until smooth.
  2. Pour the mixture over the cooled crust and spread evenly.
Blueberries
  1. In a separate bowl, toss fresh blueberries with lemon juice, cornstarch, and a bit of flour until well coated.
  2. Spread the blueberry mixture evenly over the cream cheese layer.
Crumble Topping
  1. Combine melted butter, brown sugar, flour, and quick-cooking oats until crumbly.
  2. Sprinkle over the blueberry layer.
Baking
  1. Bake for 35-40 minutes until the topping is golden brown and the filling is set.
  2. Cool on a wire rack for 1 hour.
Chill and Serve
  1. Transfer to the refrigerator and chill for 2-3 hours.
  2. Serve sliced, optionally topped with vanilla ice cream.
