Cheesecake Filling
- Beat softened cream cheese with vanilla, sugar, flour, and egg in a large mixing bowl until smooth.
- Pour the mixture over the cooled crust and spread evenly.
Blueberries
- In a separate bowl, toss fresh blueberries with lemon juice, cornstarch, and a bit of flour until well coated.
- Spread the blueberry mixture evenly over the cream cheese layer.
Crumble Topping
- Combine melted butter, brown sugar, flour, and quick-cooking oats until crumbly.
- Sprinkle over the blueberry layer.
Baking
- Bake for 35-40 minutes until the topping is golden brown and the filling is set.
- Cool on a wire rack for 1 hour.
Chill and Serve
- Transfer to the refrigerator and chill for 2-3 hours.
- Serve sliced, optionally topped with vanilla ice cream.
