- In a large sauté pan, heat 2 tablespoons of olive oil over medium heat. Add a pinch of crushed red pepper flakes and 3 minced garlic cloves, sautéing for about 30 seconds until fragrant.
- Add 1 pint of halved cherry tomatoes to the pan, stirring gently. Cook for 8-12 minutes until they soften and burst.
- Pour in ½ cup of dry white wine, ¼ cup of chopped fresh basil, the juice and zest of one lemon, and season with salt, pepper, and sugar. Simmer for an additional 2 minutes.
- Heat another skillet over medium-high heat with 2 tablespoons of olive oil. Season 4 cod fillets with salt and pepper and sear each side for 3-4 minutes until golden brown.
- Pour the white wine tomato basil sauce over the cod and warm through for about a minute before serving.
