Method
 

Step-by-Step Instructions
  1. Warm BBQ sauce in a saucepan over low heat for 2-3 minutes. Mix shredded chicken with the warmed BBQ sauce until coated.
  2. Sprinkle Monterey Jack cheese on half of a tortilla, add BBQ chicken mixture, then top with more cheese. Fold the tortilla in half.
  3. Heat a large skillet over medium heat for 2 minutes. Cook the quesadilla for 3-4 minutes until golden brown and cheese begins to melt.
  4. Flip the quesadilla using a spatula and cook for an additional 2-3 minutes until the second side is golden and crispy.
  5. Remove from skillet and let cool slightly. Cut into wedges and serve with extra BBQ sauce, sour cream, or salsa.
