  • 2 cups cherry tomatoes can substitute with grape tomatoes
  • 2 cloves garlic minced for best flavor
  • 2 tbsp balsamic vinegar substitute with red wine vinegar if necessary
  • 2 tbsp olive oil avocado oil can be used as a substitute
  • sea salt to taste
  • freshly ground black pepper to taste
For the Toast
  • 4 slices crusty sourdough bread gluten-free bread can be used
  • 4 tbsp hummus your favorite store-bought or homemade
For Serving
  • sunflower seeds optional, can substitute with pumpkin seeds

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 170°C (fan)/190°C/375°F.
  2. In a small bowl, combine minced garlic, balsamic vinegar, and olive oil.
  3. Place cherry tomatoes into the ovenproof dish and drizzle the balsamic mixture over them.
  4. Season with sea salt and freshly ground black pepper.
  5. Roast the tomatoes for about 20 minutes.
  6. Toast the slices of sourdough bread until crispy, about 5-7 minutes.
  7. Spread a generous amount of hummus over each slice of toasted bread.
  8. Layer the roasted tomatoes on top of the hummus.
  9. Sprinkle sunflower seeds over the top before serving.
