  4. Add minced garlic and grated ginger to the skillet, stirring for 1–2 minutes until fragrant.
  5. Pour in coconut milk, lemon juice, and lemon zest, stirring to bring to a simmer (3–4 minutes).
  6. Place the seasoned cod fillets in a baking dish and pour the coconut lemon cream sauce over them.
  7. Bake in the preheated oven for 20–25 minutes, until the cod flakes easily with a fork.
  8. Remove from oven and let the dish rest for 5 minutes before serving.
