- Preheat your oven to 180°C (350°F).
- Season the cod fillets with salt and freshly ground pepper on both sides.
- In a skillet over medium heat, add olive oil and sauté the chopped onion for 3-4 minutes.
- Add minced garlic and ginger, stirring for 1-2 minutes until fragrant.
- Pour in coconut milk, lemon juice, and lemon zest, stirring well and simmering for 3-4 minutes.
- Transfer seasoned cod to a baking dish and drizzle sauce over it.
- Bake for 20-25 minutes until fish flakes easily with a fork.
- Let the cod rest for a couple of minutes before serving and garnish with fresh herbs.
